All of the parking lots, their cost and who to call for information is on the NJ Transit website.
But, since I moved down that way just this past year (not any of the towns you listed but I looked in them) I can give you a little info. Middletown has a waiting list for resident parking at their main lot. However, they have an overflow lot that probably has spots available--I believe it's by a Sears on Route 35. There's a bus or shuttle that takes you from there to the train station.
Hazlet has a waiting list for resident parking, and they have some limited spots for Daily Parking, too. If you leave early enough you would have a shot at one of the daily spots.
Aberdeen/Matawan from what I understand has the longest waiting list of all, like years.
When I moved to Monmouth County a year ago, I lived in Long Branch, which has daily parking only but always has spots. It's $3 a day. Now I am in Eatontown and park at Little Silver, which does have non-resident permits available.
Your best bet is to call each town and find out what the situation is. That's what I did last year when I was looking for a place to live. My info may be outdated by now. Good luck!
Oh, and there are a couple of lots in the vicinity of Newark Penn Station that have $8 per day parking if you get there before a certain time. I have never used them--just saw the signs when I was there a few times.
