We are looking to rent a newer/updated townhouse, in a community with lots of kids of elementary age. Price range tops $2500 for a 2 Br. Which town would better suit our needs?
What we are looking for are lots of walking paths (ideally from the community), scattered playgrounds/parks, and people to meet there. We are of European descent, so we would not want our child to be the only caucasian child in the class. Do we even need to worry about that with Plainsboro? How open is the "diversity" community there?

I don't think you'll have a problem in Plainsboro (or adjacent West Windsor, with which Plainsboro shares a very highly regarded school district). There are townhome communities all over both towns that are full of elementary school kids. I just went to my fifth-grader's band concert and saw people of every ethnic background.
There is no racial or ethnic majority here. We have large Asian (East and South) communities, but also lots of recent European immigrants and white Americans, as well as people of non-Asian and non-European backgrounds. This community looks like the world.
I recommend Plainsboro, West Windsor, etc. Princeton is right next door but it's a higher premium to live there. Schools are amazing, low crime, easy access to 1, 130 and the Turnpike. You can't go wrong.
I see that some units listed under the Princeton address belong to the Montgomery school district. I am not familiar with how it compares to the WWP/Princeton schools. The Princeton address usage gets so tricky.

It seems that anything within a 10 mile radius of Princeton calls itself Princeton and commands a Princeton price tag.
The only people who really benefit from the Princeton ammenities are the ones who live in the Borough of Princeton.
Montgomery schools are extremely good but it is not Princeton
The Princeton zip code (08540) can include Montgomery, South Brunswick, Plainsboro and West Windsor.
As well, even pieces of Franklin Twp, Somerset County have 08540.

hardly a few decades ago, no one would have thought this could be a possible question for any US town!
Plainsboro and Princeton are both great towns with excellent schools. you can not go wrong with either.
