Definitely north to me. And I've typically inhabited Morris County, Hudson County and NYC, so my definition of north is pretty biased to include less places.
I have relatives in Union County - Scotch Plains, Clark and Mountainside - they all call it North Jersey.
I lived in Middlesex County, on both sides of the river - Sayreville, Edison and North Brunswick (in that order) - and it was always Central Jersey. Somerset County is also Central, but looking at a map I always thought parts of it were north. Its northern border is on the same latitude as Union's northern border. I'm more familiar with Bridgewater and the areas south of that down 206 than I am with places like Bedminster and Basking Ridge further north, so don't know what those people up there call it.
Then I lived in Camden County - Barrington - and it was South Jersey, despite NJ extends about 100 or so miles further south than that. People in Camden County call Middlesex and Somerset North Jersey and don't believe Central Jersey is a real place.
