One thing to keep in mind is that South Orange and Maplewood both have killer taxes. A $400K-$500K house will have $11K-$15K+ in property taxes. Fair Lawn on the other hand will max out around $12K in that same price range. If you like Maplewood/South Orange I'd also check out Livingston.

Nothing in North Jersey will allows you an hour commute to Manhattan. Depending on how far you are from the train station, the commute will be anywhere between 70 - 85 minutes. That includes Fair Lawn, River Edge and Oradell.
South Orange and Maplewood have some of the best commutes to Midtown in the suburban part of NJ, provided you can easily get to the train station from your house. 45 minutes door-to-Penn Station is certainly doable from much of both towns. Don't know about the other towns,
That is when the trains don't get stuck in the two 150 year old tunnels that go under Hudson. Happens a few time a month...

It is clearly possible to make the commute in an hour - door to door. I have an office on 7th between 30 and 31.
River Edge 6:27am gets to NY Penn at 7:14am.
NY Penn 5:28pm gets to River Edge at 6:12pm.
New Bridge Landing, Essex St, and Anderson St on the Pascack Valley Line are even closer and also have 5 minute walkable housing or driving connections.

The ferries (Edgewater, Weehawken, Hoboken, JC) all can make commutes well under an hour long door-to-door possible. Taking a bus across the GWB and then the A train down can come in under an hour too. PATH + subway too. Also there are several express bus routes to Bergen County that can do the trick on average, although for that you'd have to budget more time in the morning (and usually get to work early) due to the risk of traffic jams.
It's 100% a doable thing.
