I am not too sure on specific sikh communities, i would suggest you should stick up good school district as a good parameter.
I would suggest Bridgewater (Raritan valley line to newark and then path to manhattan)
Other options on this transport route can be Somerville and new plainsboro
Other option can be Morristown, Bernards, Long hill, summit, new providence - The schools for Bernards are top notch and you can take Gladstone/Morris Essex line till Hoboken and then path to manhattan.
If you are going for a condo type house 2bhk in $2500 is fairly attainable.

North Edison fits all your parameters...great schools, diverse population, direct train to NYC, proximity to Gurudwaras in Woodbridge and Bridgewater

PATH - Port Authority of NY & NJ refers to the train service between NY & NJ.
Irrespective of whichever place you decide upon go to njtransit.com and take a rough estimate on how to reach manhattan and approx commute time. Also good parameter to look at is the frequency of the trains.
