In Essex and Bergen? Like a weekend trip or a 2 hour drive? The shore is one thing. How about other things like hiking, horses, shooting for the ethnic urban boy?
What can I drive out to do there that I wouldn't be able to do in the city as easily?
go to Sussex County by Newton. There are mountains over 1,000 feet tall and the views are insane. literally the "middle of nowhere". if you want to go hiking and experience a whole nother world, I recommend this.
Bergen County's biggest hiking areas are Palisades Park and Ramapo Reservation. There's a number of smaller preserves scattered about. If you wanted backpacking or much longer hikes and camping you could go further west to the Appalachian trail (or up to it in Rockland).
There's skydiving in Sussex County too.
