Do pineys extend into Salem and Cumberland counties, and all the rural areas of NJ? Should we call the people who live in Sussex, Warren, Hunterdon, northern Passaic, outer rim of Morris county something?
I'm unaware of a moniker (in comparison to 'Piney') for people who live in the area you refer to in Northern New Jersey, but the name of the area itself is the New Jersey Skylands. Would that make the residents 'Skylanders'?

Can't stop laughing. I have lived in Cumberland county for over 30 years. And I know Salem county like the back of my hand. There are no pineys in either county. It is a pinelands thing. While there may be some hicks in both counties (and considerably less now than when I moved here). The piney is a unique thing to a specific area. I just love how some people try to stigmatize southern New Jersey as a total dump. It simply is not.

Southern New Jersey is one of the most beautiful and ecologically interesting places on the East Coast, between the Atlantic coast, the core Barrens, the Inner Coastal Plain, Delaware Bayshore, and Cape May (bird migration). I can't imagine that anyone in their right mind would call it a dump.
Also, the Pine Barrens reach into Cumberland County, I'm thinking that there are at least a few original pineys there. I know one who resides in Cumberland County, but the older generations of his family were from elsewhere in the Barrens. I agree with your assessment of Salem County though.
