many differences. First and foremost - location - both are commutable to the city - I have friends that commute from both locations - PJ is about 90 mins door to door.. Livingston is about an hour. PJ - Home prices are much cheaper than, taxes are less, bigger bang for your buck, closer to philly
Livingston - high taxes, more densely populated, closer to NYC, better shopping (short hills mall), closer to major highways - PJ is 25-30 mins from the turnpike
similarities - demographic is very similar, good neighborhoods....

The most important factors for me are good schools, diverse professional community and newer homes for a 700K budget in that order.
We are a couple with young kids and looking for neighborhoods with young families and friendly neighbors.
Depending on what you want in a house - you will get more bang for your buck in PJ - but personally speaking - I would rather the Livingston area. My wife and I actually went through these conversations about 6 years ago - and we live about 10 mins from Livingston now. We are in an area that has much more amenities, culture, schools, etc.
Why pay more as a choice? Princeton junction gives you great schools, the shore is closer, Philly is closer for more activities, museums, etc. You can still take the express train to NYC if needed. Its just more space and newer construction if needed. I have nothing against Livingston. If I didn't need a city commute, then Essex or Union county are just too expensive.

We live in Princeton Jct and have enjoyed the neighbourhood, the proximity to the station (although we no longer commute to NYC for work, just for fun) the community parks and the area shops. The schools are solidly good and have been for the 20+ years we have been here.
It was an easy decision for us as our jobs are in Princeton and Hamilton.
I have no idea about Livingston. My advice, do what best suits your needs.
