OP here...My roommate is nowhere to be seen since Thursday. I sent her a message on Friday telling her I was moving out and that I would formally give her a letter. Haven't heard anything yet so I left a copy of the letter in the kitchen counter in a dated envelope for her to see. I'm not sure what else to do aside from mailing a second copy to the apartment?

Just make sure they acknowledge receipt of the letter in some format and then you're legally in the clear. Even them yelling to about about "what the hell is this letter about you leaving?" is enough to show they've read it.
