High Point State Park, in Sussex County, has everything that you are seeking, including at least three lakes:
With over 50 miles of trails, High Point State Park offers visitors a variety of trail options throughout the year. Designated multiple-use trails are available for hiking, mountain biking, horseback riding, cross country skiing, snowshoeing, dogsledding and snowmobiling. Trails vary in length from one half-mile to 18 miles, and take visitors through unique and diverse landscapes including an Atlantic white cedar swamp, mountain ridge tops with 360-degree views, dense forests, fields, and wetlands.
You're only going to find "natural" kettle lakes and ponds north of the glaciation line (which is roughly north of I-80). Sussex county has a ton of them, and the bigger ones are open to the public. Swartswood and Wawayanda lakes come to mind, but there is also Sunfish Pond along the AT in the Delaware Water Gap NRA.

That said, there are plenty of beautiful areas in all three counties. Round Valley and Spruce Run are reservoirs with swimming areas, and of course the Delaware River! The northern parts of the Raritan River (around Ken Lockwood gorge, for example) is quite nice, as well, as are the Musconetcong and Black Rivers in Warren and Morris Counties.
Hunterdon in particular has a very extensive park system, and there really is something for everyone within a relatively easy drive.
Include Pasaaic county as well, right in the mix. As well as Morris co. North J was washed by glaciers and their retreat left lakes all over the place.
greenwood lake, newark watershed authority gives hiking permits with many hidden reservoirs and lakes...clinton, Canister, etc. No crowds, can bump into anything from bobcat to bear.
