But why is it sufficient to know only about Mexico Spanish vs non-Mexico Spanish? Why not about India Hindi vs Pakistan Hindi ? Or Canada French vs France French? Or Saudi Arabic vs non-Saudi Arabic?
Cuz "Pakistani Hindi" is called "Urdu".
But to answer your first question, it's because the topic of this thread is about a South American culture and cuisine, which is why it went to Spanish-speaking countries and the differences in their food.
I don't think exposure to Peruvian culture and food is as uncommon as you think in our region. There are Peruvian restaurants on Long Island and my high school teacher was from Lima. I learned Spanish with a Peruvian accent. I worked with a number of Brooklyn Orthodox Jews who hailed from Peru and spoke Spanish to each other (and to other South Americans). Patterson isn't all that far from my northern NJ home so I'll consider going, but I don't eat meat and most food from that part of the world is meat heavy.
