The correct term is... fantastic. I know this because I am from new jersey, and I am fantastic, therefore others from jersey are as well.

That said, Jerseyan and Jerseyite are both used and valid demonyms, Jerseyan seems to be more common.

3) Uniquely Fabulous

All of these are correct and can be used interchangeably.
