Title basically says it all. I'm coming to New Orleans this week, staying for 5 days and am SO excited to experience the authentic NOLA food, music and culture. I recently took a course in college on the Arts and Culture of the Slave South that focused heavily on New Orleans, and since then I've been dying to visit. What are some of quintessential New Orleans dishes that don't include shell-fish and won't send me to the hospital? Thanks in advance for the help! Any other advice/recommendations would be greatly appreciated (I'm a bit of a fried chicken connoisseur) - can't wait to visit!

Sausage gumbo but ask about seafood. Jambalaya but ask. Grits and grillades. The problem is many dishes might be cooked on the same surface or w/o washing thoroughly the utensils, so always ask if you are highly allergic. Creme Brulee for dessert. Stuffed mirlitons if not stuffed with shrimp, same for Bell Peppers, can be found stuffed with hamburger.

Is Liuzza's on Bienville still open? If so, they use to have the absolutely BEST fried chicken...and onion rings. Hmmm, I'm getting hungry!
