I stayed at the Ambassador a few years back, I thought it was great except for the very tiny bathroom. If I were you I would use Priceline, or if you're staying for three days or more, I would look at www.vrbo.com (http://www.vrbo.com - broken link). The one thing I would not do is stay outside the city in Metairie; what's the point?

Well I'm interested in visiting plantations outside of the city as well. So not all my time would be spent in NO.

I've stayed at the Weston Canal Place on Rue d'Iberville and Canal Street a couple of times. I love it, I stay there all the time. Last time I stayed it was $129 + tax if paid in advance. It's on the edge of the FQ, right across the street from Harrahs Casino, the Aquarium and the Riverwalk. Maybe a block from Jax Brewery, down the street from Cafe du Monde. Canal Place shopping center is right downstairs. It's clean, the staff is friendly. The whole hotel has a relaxed feel to it. There was one time where there was a drunk lady passed out on the floor in the lobby and the staff was trying to help her out, but it didn't bother me. Oh and valet parking will cost you close to $40 with tip per day, but there is a parking lot right across the street where it's much less, maybe $5-$10 a day? And if you walk a couple of blocks down Rue d'Iberville towards the FQ, you'll run into one of the best seafood restaurants in town, Deanie's. They're always crowded but the food is good and plenty. Also, there's this restaurant right next to the Aquarium where you can sit outside and have a great view of the river and get really good crawfish and beer. If you're going in March, the weather should be nice. Hope this helps.

I suggest considering the Faubourg Marigny area just across from The Quarter. Lots of historic little B&B's there. I can make two suggestions: Dauphine House on Dauphine and Lamothe House on Esplanade. Both are close to Frenchman Street, which you should really explore when you go.
