I notice a lot of the floor plans doesn't have bathtubs, just a small shower stall
Bathtubs are going way of Dodo for some time now. This is for market rate new construction market rate multi-family and private single family homes.
Majority of population today take showers, not baths as such all sorts of latter have been installed while bathtubs are becoming rare.
On the other side of thing Boomers and their parent's generation are getting older, and bathtubs present issues for those who have problems with mobility. Walk in tubs which are really just showers with seats are becoming popular as well. Even NYCHA is going into apartments located in senior housing and replacing standard bathtubs with walk in shower types.
From a space and design point of view showers are a no brainer. You can leave more room for living space by ditching footprint needed for a bath tub and going with a shower set up. Not to mention in many small NYC apartments bath tubs weren't that huge anyway.
