I apologize as I’m sure this has been asked before. How do you show proof that you’ve paid rent, when your friend is your roommate/landlord and you pay them in cash? TIA.

You'll need the person you pay to provide a notarized letter stating that, and how much, you pay in rent.

Do you have a lease with the roommate? Or is it an arrangement between friends.

If you have a lease then maybe just get a notebook and have the roommate sign next to the day's date when you hand over the money. Otherwise you are just there at his discretion each month anyway so IMHO there is no need, just a formality in case the person is forgetting.

One of you can buy a receipt book at the dollar store or Amazon for payments going forward. Just another idea.

Many years ago I rented my apartment from a friend, it was a two family house they owned, they lived in half and I was the tenant in the other half. EDIT: Just saw your clarification.
