So I was lucky to be eligible for one of my applications (Vanderbilt in Brooklyn) and got the email requesting the documents. What happens after I submit them? and how long would it take move in, just want know so I can plan around my current lease.

After you submit them, you’ll most likely have to submit a second batch. There isn’t a guarantee that you will get chosen even after sending documents, but there is hope.

For me, the whole process from submitting documents to viewing apartment and move in has taken 4-5 months

I would suggest you pick a thread that's about a building, and start reading. This site is a gold mine of information. Also, if there is a thread for your building, start there. Best of luck!

No, not necessarily! If you meet the income requirements and there’s units available, you should be able to get approved. Try to remain hopeful, but yes, don’t start packing just yet .. you are on your way though
