There's a place called Rub I went to that was very good--their specialty is (duh) dry rub BBQ and it might be St. Louis style, not sure. You can choose which kind of ribs you prefer (from which portions of the cow). I've been to places that featured North Carolina BBQ, and I know each region is different. Do a search on NY Magazine online for other possible options. Upstater's suggestions sound great too.

If you are still looking, I second Rub (it's on 23d st between 5th and 6th or 6th and 7th). I'm more of a pork girl, but they have these pieces of beef brisket called "Burnt Ends" that are insanely good.

And although it's a tourist trap, in a pinch I took my Grandma from Tennessee to Virgil's in Times Square and she said the Memphis style ribs ribs were completely authentic. I was honestly surprised by the quality of the food - I usually hate mega restaurants.

Blue Smoke is fine, but pretty expensive for what it is.

OMG Dinosaur BBQ is amazing- I went to the on in Syracuse back in college. My boyfriend is from Rochester and he loves that place too. OMG <3 <3
