I am searching for condos with my family in Manhattan, however I do not live in NYC so I'm not familiar with the neighborhoods.
Which is a better neighborhood for a family to live in: Gramercy Park South or the 500s on West 17th Street?
My children be going to private schools so schools aren't a main concern but mostly neighborhood safety, quality of life (restaurants, groceries, shopping), noise level & access to nearby parks are what we're trying to compare the two neighborhoods based on.

Especially if the children are small, go for the Upper West Side. There is very little parkland in Gramercy unless you have a key to the private park there, and even then the park is no comparison to the activitities, playgrounds and things to do for kids in Central Park and Riverside Park, which are obviously much larger. But with older kids who can get around the city on their own, I think it would be a wash.
Also keep in mind the commute to wherever your kids' school is/are. That might be the real determinant about where to live when you're talking about kids too young to travel on their own. In NYC that usually happens about 6th grade give or take, depending on the parents' sensitivities and fears, the kids' temperment, whether by bus or train, whether the nabe is dangerous or not, etc etc.
