not really comparable to Manhattan yet, but Durham has a growing food card scene. becoming very popular. Not there yet in Raleigh. they are still workignout the kinks with restaurant owners.
Find a city with sky high commercial rents beyond the reach of the average startup restaurant, and which attracts and produces young *chefs* of great skill and imaginatiion. Also, a city with a long establiished street food culture, so much so that the idea of buying good food on the street, and eating it on the street. Lastly, a city government capable of encouraging and enforcing sanitary street cooking conditions.
That's the receipe. Not easily fond in a prosporous nation with a car and mall culture, as well as relatively affordable commercial rents; particularly when its cities are unattractive and contracting.
I got friends from California who brag of multi-ethnic/genre-bending food cart scenes in San Diego and San Francisco.
I was just about to say that. Every time I tune into one of the food channels they're always in Cali exploring food trucks. I think it's made its way to NYC but nothing in comparison to the west coast. Two summers ago there were several food trucks by my building but they weren't anything special. No fusion at all.
I thought Cali started and still rules the food truck scene though I haven't been there in years. As bellakin said, on the Food Network, they're always focusing on Cali.
I'd rather give my money to the hipster that takes the risk and opens up a place in the hood than one that drives around the city on wheels.
