cheap labor to pay overhead and inflation on top of that is destroying the u.s.
Back then you have Italians with their entire family operation. Today how many Italian kids want to work at their Pop's Pizzeria?

But Numero Uno was supposed to be a high-end pizza chain. Higher prices, fancier pizza.

I think it's hipsters who hate chains. Yuppies don't mind chains, so long as they're high-end. Abercrombie & Fitch, L.L. Bean, and Banana Republic (after The Gap bought it) are chains that are reputedly popular with yuppies. Whole Foods is a high-end organic food chain in Los Angeles (do they have Whole Foods in NY?) that is reputedly popular with yuppies. So too Starbucks.

Sure, hipsters claim to hate Starbucks. But not yuppies...

if they could make enough money, they would still work for their family's business.

Starbucks is the perfect example. In the early 90s, Deli coffee is king in NYC. Many were ripping people off selling $2 cups of foil bag coffees. You have the high end places selling fresh grind for more. You had to look around for DD for that $1.50 coffee. Then Starbucks took over and Deli coffee actually gotten better as of late but still most yuppies are at Starbucks and hipsters drink coffee truck coffee.

There are still a couple good pizza places in my neighborhood that are owned and run by Italian families. I don't think they're going anywhere.

It's a shame how much terrible pizza is out there, though.

Plenty of good NYC style pizza. Outer Boro's have the best ones. In the City, John's on Bleeker is my favorite.

This is not exactly on point, but I would comment that the biggest near term threat to local pizza places is their inability to adapt to the changing demands of the marketplace. The marketplace is increasingly asking for alternatives to high carb, high gluten foods like pizza. Alternative doughs exist, but for the most part pizza places are stuck in the 1970s.

A few decent pizza places near me so can't complain too much. And $1 pizza is great for a cheap, quick meal.
