I found the commute from anywhere in New Jersey to Columbia to be a literal nightmare.

If you have to get over the bridge at rush hour, I can see that.
Queens will probably be the OP's best bet.

Which is what I keep telling people, the best view of NYC is not Brooklyn and not NYC in general. It's on the NJ side. If I was single I get a waterfront rental next to the pier and have the best view. You can spend $2500-3500 and get a 2BR new building instead of some remodeled tiny room in Manhattan.
Lady Liberty faces towards NJ not NY.

Go to Streeteasy.com, just a quick search revealed several apartments in the city under $2300 and 1 br proper too. Keep looking. You need to look 3-4 weeks before moving.

Well, if your search is not confined to NYC, you can go for various options. Jersey City is one of them. As far as Brooklyn is considered, it is not a good option. But, if you want to stick to the NYC, you need to understand the layout of the islands. The fact is that NJ is east of Manhattan and a number of places are accessible from there, you will get reasonable priced apartments here.

Why does OP believe that all of Manhattan is out of reach on a budget of $2300? Just a cursory search of the Upper East Side neighborhood of Yorkville shows many apartments at that price point or less/ I think OP should strongly look at the area. It's an easy commute to Wall St from the express stop at 86th and Lex, and also a reasonably quick one to Columbia via the buses on Madison/Fifth, or the crosstown bus and subway up Broadway.
A Yorkville apartment will likely be older and a walk up, but the neighborhood will have all the amenities most people could want, and not be far from anything else. This slice of the Upper East Side seems like a place that OP and girlfriend should give serious consideration.
