I'd suggest you head towards the Finger Lakes district of New York. You would go north from Falling Waters to Interstate 80, then head east on I-80 to U.S. Route 15 north, which will take you into New York State, close to Corning. The Finger Lakes district is just north of Corning. Be aware, however, that this will be a rather long day's drive -- central Pennsylvania is quite mountainous, and there are no north-south Interstate highways in that area. The offset is that the remainder of your drive to Saratoga Springs will be a lot shorter. From the Finger Lakes, I-90 will take you very close to Saratoga Springs
The Finger Lakes region is renowned for its numerous wineries. When my wife and I visited there five years ago, we found the small towns of Hammondsport (south end of Lake Keuka), the old part of Geneva (north end of Lake Seneca), and Skaneatles (north end of Lake Skaneatles) particularly nice. If you're planning to stay a couple of days or longer, sightseeing possibilities include, in addition to the wineries, the Corning Glass Museum, Watkins Glen State Park at the south end of Lake Seneca, and the college town (Cornell University) of Ithaca at the south end of Lake Cayuga.
