Those Cantonese noodle places are nothing to write home about. It's not like they are serving some Lanzhou hand spun noodles. I use to go late at night and prefer not to go because the service is poor and quality is subpar at that time.
I'm an insomniac. Want to get some weird looks, take a book in to a place like that at 2 am and read while eating.
Me, too, though much less so in the last few years—used to average maybe twenty hours of sleep a week and go for walks that lasted hours late at night.
Ok, 24/7 might sounds great, but I say most people would be at home sleeping after midnight. Maybe people that go to bar and people that work night shift, those are probably the only customers. Not sure how many of these people would be up for the food.

It's one establishment in an area where all others will have closed for the night, so it can probably sop up a lot of clients.
Yeah I knew Wo Hop is open late but not quite 24/7. Still, I'm looking forward to this because there are so few places in Chinatown open past 2 (or even midnight for that matter).
I think that between the Chinese, Chinatown bus users, and LES hipsters, there will be enough demand to keep this place going at night
