Check out the website linked below for apartment rentals in midtown and other areas. My advice is stay in San Diego. The daily grind in NYC will eventually get to you.
I would recommend Long Island City. The neighborhood has great proximity to Times Square, is as family-friendly as one could ask for, and you could easily find a 3-BR rental within a nice, multi-family private house within your budget.
Excellent point @fatsquirrel! We are white and Argentinian. Bilingual Spanish family and the kids attend a Spanish dual language school here in San Diego, so Spanish speaking areas would be a bonus!
With your budget I think you should just stay in Manhattan, since you want to be out and about all the time. You might find furnished rentals too expensive, but think about whether you could make one huge trip to IKEA, pay $5000 one time (or whatever it costs) to purchase the necessities + pay for delivery and someone to put everything together. I actually don't know how much it would cost to do so for a family's worth of stuff but if you find furnished rentals too prohibitive, it's another option.

You could probably swing this on the UWS if you weren't fixated on amenities and could live with one bathroom. Easy commute to Times Square. Close to Central and Riverside Parks.

Queens areas like Sunnyside and Woodside have many Spanish speakers.

You stated Spanish speaking is a plus. Well then, don't avoid looking into the upper UPPER East side, North of 96th Street. There are some nicer buildings going up at a pretty large discount to downtown rents.
Look NEAR a subway stop and as far as possible from an NYCHA project.
I saw a reasonable, furnished 3 bedroom online yesterday but I didn't post it because I though "furnished" would be a minus...I see now it would have been a plus. I would never find it again, sorry.
