Here the age for drinking (and thus serving) alcohol is 21, so those things are out. How about a summer au pair position?

I thought you could serve at 18? I could be wrong, just an assumption on my part.
You guys check out the Irish Echo newspaper?

Here's a link for a place in the Adirondack Mtns, a semi-formal outdoor oriented summer resort. Rosemary hires students from Ireland every summer, girls and boys. www.hollsinn.com

Look into Woodlawn in the Bronx or Woodside/Maspeth in Queens. These are the two areas in the city where Irish immigrants tend to reside.
As baylovers said check out the Irish Echo: http://www.irishecho.com/
Also the Irish Voice is qutie good: http://www.irishabroad.com/news/irishinamerica/ Especially look at the classifieds in each paper. There is a decent ammount of work to be had in the area.
A lot of Irish work at the shore in NY and NJ during the summers. Perhaps you should also check that out?

I wouldn’t rent to them for all the tea in China, all they want to do is party. What work ?
I have yet to know one who has gone back home with more then $10 in a pocket
Rented to 3 from Ireland out in Montauk once. Within one week I get a call from the guy next door about kids throwing up in his driveway, loud noise.
Turns out they had 9 more including girls from back home living in it ....4 per room bed sheets stapled to the ceiling as room dividers. Trashed the place and overloaded the cesspool!
Lucky I didnt give them a lease never again !

Wow that sounds pretty horrific. The Irish immigrants in Woodlawn/Woodside aren't anywhere that bad though. Perhaps it isn't so much of a problem there though because those Irish folks are planning on being here permanently whereas the guys you are talking about sound like they have no plans on staying for a long term basis.

Yes exactly Mead they come mid June to August take menial 5-11 PM restaurant jobs waitress, bartend, bus tables to make a couple bux then raise hell Midnight till dawn.
It was becoming an epidemic in Montauk and East Hampton till they cracked down with the VISAs.
Many of the restaurants fly them in and secure them cottages, houses.........Live 4 to a room.
