There are tons of places open all the time. Not every store in every neighborhood is open 24/7, but certain neighborhoods are more all night than others. There are tons of restaurants open all night. Im not just refering to diners. I dont really believe those count. There are 24 hour diners everywhere. In a two block radius from my quiet upper east side apartment there are 4all night sit down places. Want real food? There are tons of late night or all night spots. Blue Ribbon in soho serves til 4. I had a great sicilian dinner at a funky east village spot on sat night at 2am. There are too many to mention. Yaffa on St Marks is all night. This is nyc for christs sake! Cafeteria in chelsea for true all night delicious food. It's a trip being there at 430am and waiting 30 min for a table. L'Express on park is an all night french bistro. If you live in the city these are well known late night options. There are 24 hour options for everything. Pastis serves late in meatpacking. there are so many options, there is a categorie for it in fodors. I couldnt possibly tell you about them all here. Can you go to Barney's at 4am? No. But there are small clothing boutiques that stay open late in the village. This all contributes to the "Ironically laid back New York Nightlife." Why? because it's all on your time. Take your time with dinner... we can go out whenever....

I think you're over stating this a little. Or atleast acting like the majority of nyc is open 24/7. Most of nyc is no different than other major metro cities. With the exception of some of the bodegas that remain open 24/7.
Most food available late night, is garbarge food. Good when you're drunk, but that's about it. There are exceptions, but they ain't the rule, or the norm.
