We are from Long Island, looking for a couple of nights a few hours away, in a nice town with things to do. We are 2 adults, early 40's like like to explore, some winter sports, shop and eat good food. Any suggestions?

Lake Placid might be to your liking. IT's a town into winter activities bit time (Whiteface Mountain). It's small enough to walk around, lots of nice places to stay. Give it a shot! They hosted the Olympics back around 1980.
Really far from LI but Ellicottville (south of Buffalo) is quite a scenic & vibrant village, loaded with shops, bars, restaurants, all driven by its ski resorts. But given a choice, I'd go with Lake Placid.
