I've only kayaked 1 of those, Lake Erie, and it remains my all-time favorite, specifically off the lake-side beaches at sunset in Presque Isle state park in PA. Going straight out from the beach, you go directly into the waves and it is so fun, feels like surfing as the kayak slips over them. The way back, going with the waves is very fun as well. Much different experience than kayaking a small lake or river. But even better is the sound and feel of isolation (no other boats out there) and the spectacular sunsets, among the best I've seen.
