Catskill Forest Preserve and Motorcycling (Maine: area, summer, motorcycles)

I did a quick search, but didn't come across what I want, and I know nothing about the area.

A small group of us plan on riding motorcycles from PA through the Catskills area toward Maine this summer in July.

Are there any great route recommendations through the Catskills area of NY?

Any sites that are a do not miss?

If you want a winding road, consider driving around the Pepacton Resevoir, on NY 30 or the NY City road on the other side. If you're looking for steep roads, try leaving the Catskills by going down Platte Cove Road, or perhaps NY 23A.
