We hit a freak snow storm going through Flagstaff in January a couple years back. We (and many others) were stranded on the hwy for 8 hours. As always when traveling in Winter, make sure you have a supply of food, water and blankets in the car!

THE FOOD, WATER,AND BLANKETS ARE GREAT TIPS THANK YOU!
There will probably be some snow in the Great Smokies about that time of the year so be prepared for that. I know it isn't like the Rockies by any stretch of the imagination and I don't do a lot of traveling so I might not know a lot about the conditions in general. My best advise is to be prepared for just about anything. Even if I had a half tank of gas on the way in and I saw a gas station as we entered an area that might be really isolated, I would stop then and fill up anyway. I am by nature a very cautious person so I would be prepared for just about anything.
We will be driving from CA.to NC. in early January we will be going I-40.
Anyone know the road conditions that time of year?
We did it at the end of December, from Oregon took 5 days with dog two cats and 4 kids, roads were not that bad had only one snow storm but it wasnt bad.

Bethanytedder is right.
You should remember to gas up somewhere beyond Knoxville (where 411 or 321 intersect with I-40) just to make sure you have plenty of fuel when you hit the winding stretch through the mountains along the TN/NC boarder, before you get to Canton NC. Not only can you have some snow issues there, I have been held up from rock slides in that area (although that is pretty rare nowadays).
My sister in LA has driven that stretch both to Michigan and to North Carolina without stopping to spend the night. But then, she was always the crazy one in the family.
Good luck.
