UNC Chapel Hill is the "golden jewel" of the UNC system in most departments, and I believe the only one with a law school other than NC Central.
You can research objective lists of Poli Sci departments online--I think US News & World Report usually prints them periodically. But of the short list you provide, UNC-Chapel Hill is hands down.

Campbell University has a law school as well....The law school is now located in downtown Raleigh. http://law.campbell.edu/
i know that UNC-Chapel Hill has one of the nation's best MPA (masters in public administration) programs. can't help you with undergrad poly sci, though.
The OP did not list those in his list, nor are they in the UNC system, which is why I said "...in the UNC system". I was presuming he was not looking for private schools.
As long as you do well, it doesn't really matter. UNC-CH/ECU are the bigger schools and have /a lot/ of people who go to law school. Just depends on other factors.
Don't overlook Elon University. A tremendous focus on undergraduate education and their law school just graduated their first class.
