Did you create a bill of sale where both parties signed?

I'm not sure about NC, but some states have a bill of sale form on their DMV site for people selling cars privately. Missouri had one and the seller was actually required by law to mail a copy to the DMV. This way, if the buyer doesn't go to the DMV, the state will send them a nastygram reminder and maybe a fine.

You can also find bill of sale forms online. I always have a document stating the car info, mileage, date, and bother buyer and seller signature for both my protection and the buyer's protection.

I am a notary in Louisiana. I notarized a car title not long ago, and the pen I was using skipped the first letter of my name, so I signed over that letter. The DMV refused to accept this and told the buyer that I had to fill out a affidavit of correctness. Can I fill this out as the notary who made the mistake and as affiant verifying the correction, or do I have
to have another notary sign this form?

You should ask Louisiana DMV, or post your question in the Louisiana forum, not the North Carolina forum.
