I'm biased since I live in the area, but I like northern Davidson County. Just south of Winston-Salem. Personally, I would search for homes that would send kids to the two brand new schools (Oak Grove middle and Oak Grove high school). Taxes are low; you can definitely find a home with an acre in OP's price range. But perhaps not as close as the mountains as OP would like???
You need to figure out much more closely which state, and area within that state, that you'll move to - and what's drawing you to THAT state - before folks can make truly meaningful suggestions.
And the base suggestion would be - since you're looking at entire states ...
1. come visit
2. rent, don't buy
VA, learned about personal property tax and that was a turn off. DE...not sure why research I did 8 years ago matters? My life is in a different place now. I have been to NC several times, mainly to Asheville. That is why I'm interested in western NC and near the mountains. Not interested in renting but I'll leave my opinion on that for another time and place.

Why are you just choosing NC without specific area you want to be in?
Fell in love with the blue ridge mountains and have visited the Asheville area several times. Obviously visiting is not enough to know the area and schools all too well. I thought coming here could help fill some blanks and help us narrow down even more. Thanks

Asheville's real estate market is one of the hottest in NC and has been for a while. That may not be a big deal as it compares to where you are... just be aware that $300,00 won't go very far in Asheville, especially to get a good school district. Have you researched threads in the western NC sub-forum?
I think the area around Winston-Salem is one of the most underrated in the state. Real estate is reasonable and it puts you close to the mountains for easy day trips and weekends.

Iredell County just outside of Charlotte is good. It's close to Charlotte, Winston Salem, and Hickory and has nice rural/semi-rural areas. I-77 and I-40 can get you to a lot of areas fast. Also in the Charlotte area, western Gaston Co, Cleveland Co., and Lincoln Co. As some have said, Davidson Co. in the Greensboro/Winston Salem area is good too.......Thought the city of Asheville is expensive, some of its suburban/outlying counties aren't. Haywood and Madison counties are rural, beautiful, and affordable, but you have close access to all Asheville has to offer. That's the beauty of metro areas. You have many more living options, cost ranges, but still have access to what the central city has to offer. Good luck in your search.

the reason I asked about 8 years ago is that it doesn't appear you ever moved out of LI. Now, you're casting a net over almost 100 counties - and most school systems are by county. It's just too broad of a net. I can probably find 50 counties in WNC where you wouldn't be happy on paper with the system. But there could be 1 or 2 good schools in each system anyway.
Now, you're taking these (somewhat) shots in the dark and will apparently go back to Zillow to look at homes.
Finding a new home - especially to purchase - is best done by figuring out the specific geographic location first, even if that is merely "within 30 minutes of Asheville, but only in these counties (schools), and at least 1 acre, 3 beds, 2 baths, under $300K".
