Hey, a little while ago I went into the Harris Teeter and purchased Burger patties. I almost always go to Lowes for everything but Harris Teeter is closer, Anyways, the burger patties on the top looked great, but the bottom ones looked like this....

Ground beef is normally brown. The butchers add a red dye to it to make it look more appetizing.

It has been exposed to air, and NOT exposed to CO (carbon monoxide) which is often used to keep the bright red appearance.

Focus on Ground Beef
Oxygen from the air reacts with meat pigments to form a bright red color which is usually seen on the surface of meat purchased in the supermarket. The pigment responsible for the red color in meat is oxymyoglobin, a substance found in all warm-blooded animals. Fresh cut meat is purplish in color. The interior of the meat may be grayish brown due to lack of oxygen; however, if all the meat in the package has turned gray or brown, it may be beginning to spoil.

Yeah I was about to say...there looks like there is nothing wrong with that meat. As a PP said the red color is injected and as long as it smells OK, then it should be perfectly fine to eat. Looks like it turned brown only where the packages above it where touching it.

Call it luck...but I have not gotten any bad meat from HT as of yet! Infact their meat smells really good and seems to stay in my refridgerator quite a while compared to meats I've purchased in other stores. I am a very satisfied customer with HT!!

I don't think it's just luck...HT is known for having the highest quality on all their meats and produce. In fact, if you have to return anything for any reason they DOUBLE your money back.

No, I didn't know that! To offer such a service must say something about their products. I found HT to be a great store. I do the majority of my shopping there.

It's even better than that - last week I picked up a pork tenderloin for about $9.50 - the sign above it said it was on sale for $7.50. At the register the price didn't change so I questioned the cashier. She took it to the back to be sure I had picked up the one that was really on sale. When she came back she called her manager and told her the sign had been put in the wrong tenderloin. For THEIR mistake, the manager promptly handed me the pork tenderloin AND refunded my $9.50!!!
