Who is buying all the trout farmed in NEPA? Where is the Market?

Everytime I come, and I stop for bathroom break at the visitor center near the PA/NJ border, there are all these brochures for the trout farms. You can go see them, and buy, and fish them in their tanks.

But what I do notice is there is hardly any trout on the menus of the largest nearby population center, namely the NYC metro. I also notice no supermarkets carry them. A Whole Foods recently opened up a few weeks ago near me. That had trout in the beginning, but have stopped carrying them. And it was cheap compared to other fist as well.

I have been to restaurants in the NEPA like Cooks Corner in Tannersville, and Cooper Seafood House in Scranton. No trout on their menus either.

Your right, don’t see trout on many menus. The last place is saw trout on a menu was at the Alter House in Clarks-Summit, but it was overpriced for trout, and I didn’t get it.
Usually I see it as a special and not a regular menu item at most restaurants.

Back in the 70s and 80s in Chicago,all you see were rainbow trout,
but now in the south,I saw one recently,cant remember where?
also orange roughy is gone as well?
You see cod,red snapper,tilapia,cat fish,swai,salmon,steelhead sometimes shark.
red fish,seabass,monkey fish or monk fish,carp,cat fish,buffalo fish .

Trout has to be very fresh or it takes on a "fishy" taste. Many restaurants that have trout on the menu have a trout tank and the chef dispatches a trout when an order comes in.


Famous scene from the movie, "North by Northwest" when Cary Grant asks Eva Marie Saint about the trout on the menu of the "20th Century Limited" and she says "a bit trouty but good."

What fish keeps well for long time though? Even vacuum sealed fish have this strange flavor if you leave in frig too long.

Trout might not seem as popular as it once was but the industry has been growing steadily. It's an oily fish with a more pronounced flavor while trends seem to be towards dryer, and milder types but sales remain strong. It's more popular in the south and some of it probably gets sold to companies that smoke and cure it for resale. Trout gets exported quite a bit too. Demand is strong in EUR and South America. Not a bad business to get into.

I found a restaurant in Tannersville on Rte 611 called Billy's Pocono Diner that serves trout. Broiled with either butter or EVOO, light seasoning and parsley.

We send the trout to Europe, and they send us their Branzinos. Branzino is everywhere in the NYC metro.

Most of their sales go to fishing clubs that buy them to stock private streams and ponds. Lake communities/associations also buy them to stock their community lake.
