Just wondering if anyone knows any local italian restaurants that may have this specialty on their menus. I always get the stuffed artichokes at Carmines in Atlantic City and would love to find a restaurant here that had served them aswell. My italian grandmother always made these as an appetizer on holidays and having these bring back many great memories. Thank you.

Easy enough to make yourself, too.

Mix:

Breadcrumbs

Grated Pecorino Romano Cheese

Parsley

Chopped garlic – very small

Add some oil, but only enough to make it a little moist



Cut the tips and stems off the artichokes.

Add breadcrumbs in between all the leaves.

Place in pot and sprinkle a little more oil over the artichokes. You can also peel the stems and put them in the pot too.

Add water till half the artichokes are covered.

Cover Pot and simmer about 45 minutes to an hour. When the leaves come out easy, they’re done.

We make them all the time, fried too mmmm....wish they werent so expensive! You wont find them around here, not a very common food choice...

Wegmans always has 'em on their on their olive bars, mini hearts or whole 'chokes marinated in oil, and sometimes quartered hearts mixed with red peppers in an oil and vinegar mix. Not cheap, $8 per lb, but very good.

Default artichoke recipe

Thanks CHS89. That recipe sounds like the one my grandmother used for her artichokes. There are so many of her recipes I wish I had asked her for, and now it's too late. Thanks again.

My mom just stuffed them with grated parm and good olive oil. Yummy! I eat them all the time, our local stores always carry them. I looked for a restaurant that carried them but I dont see any in my area. (Lake Wallenpaupack) I am going to try the recipe above, it sounds yummy!

I use a similar recipe, but I simmer them in chicken broth instead of water. gives them a little extra mm mmm goodness and you can spoon a little over to moisten them up when done
