I received a food dehydrator for Christmas that can be used to make beef jerky and I'm anxious to make some. Does anyone know of a good store in the Northern Va. area that sells some good quality lean steak AND can slice it up for me into jerky size strips? The second point is important - I'd like to avoid the cutting up step, so if there is anyplace that could do that, I'll get it there and be ready to go...

I would give the Latino markets a try. The skirt steak they use for tacos would work good for jerky. About 3/16 of an inch thick or "cinco milimeteros", some sea salt and some soy sauce will do the trick. Bananas and pineapple are good, too. Nice gift.

Go to the Korean supermarkets -- H Mart for sure has pre-cut thin lean beef as is used for their grilled BBQs all packaged up and ready to go.

If you want something sliced to order, call Springfield Butcher, as they can probably help you out.

But...you have to find one who has a slicer for raw meat...and not used on cold cuts (its against health codes for both obviously). However...the H-Mart in Centerville has done this for me.
