I notices that Ocala area seems have more large trees, and appears to have rolling green hills. Does this make the summers more tolerable? Or is this area just as hot and humid as the rest of Florida?

Being centrally located, the area is particularly humid for most of the year in general.

Those of us who live here stay indoors whenever possible with air conditioning most of the year. At least we don't have to shovel snow.

No, but do bring a sweater, the A/C in many places is a bit chilly. You won't want to be outside mid-day, during the summer.

My observation has been that the further inland you go, the less humid it becomes. It's hotter inland but the heat feels drier. I just moved from the Florida Keys to Sebring a year ago and I find the summers to be much more bearable in Sebring than in the Keys. A lady I work with who moved here from Miami said the same thing. My guess would be that the moisture from the ocean increases the humidity. Others may feel differently of course.
