I've read about crime in Ocala.
Are the homes I've found online on 62nd & 64th in a safe area?

You need to provide a little more information about where you are inquiring about. What type of road (Street, Avenue, Court, Circle, Road, etc.). You will get more feedback with more information once the neighborhood is clearly identified.

Also, it's hard to tell from looking online, whether there's an HOA.

Are sink holes something i should be concerned about?

My guess is these locations are ok. You want to go to the Marion County sheriffs web site and their Facebook web site and look for crime map etc.

HOAs in both. Bahia Oaks is an older mobile/manufactured community. It is not strictly 55 and over. The location is slightly better being right off of Airport Rd (60th) and 200, but it can be a bit sketchy depending on your neighbors.
Spruce Creek North is a 55+ community. Mainly older-stick-built homes. Just north of the Oak Run north gate. A little more quiet and secluded and nice. Main road in and out is 103rd St Rd. A busy 2 lane due to be expanded at some point. Close enough to all shopping, I would prefer Spruce Creek of the two.

And both are SECO electric.

Good point on the electric. There are a number of different utility supplies at various costs. Be sure to check the rates for each utility and compare to your current usage. The cost differences could be significant. Don't forget to include watering your lawn.
