The only part of Jenniemison's post I'm even really even going to comment on is #3. I don't know what part of town you live in or where you frequent, but I can say that I've lived here for 6 years, we eat out all the time, and we do not ever eat at chain places, except for the occasional fast food place.

Have you tried places like Sushi Neko, Cafe Nova, Matthew Kenney (vegetarian), CoolGreens, Cafe 501, Cheever's, Blue Nile (Ethiopian), Cafe do Brasil, Italian Jim's/Bella Forte Glass Studio, 1492, Tuckers Onion Burger, Flint, The Paseo Grill, Big Truck Taco's, Iguana Grill, or any other of the great local restaurants? A couple of these may have more than one location here in town, but they are not chains. If not, maybe you should get out more and explore other areas of the city. UrbanSpoon can be your friend in a new city.

As far as seafood, no there's not going to be much good seafood here, since the nearest ocean is about a 10 hour drive away. And when you do find it, it's going to be expensive because it costs a lot of money to get fresh seafood here, because it has to be either flown in or trucked in (in which case, it may not be that fresh once it arrives). Unfortunately, that's a problem with geography, and not something the people of Oklahoma can do anything about.

The only other thing I will comment on is to briefly mention what was said about interracial dating. We moved here from one of the largest cities in the country and I see way more interracial relationships here than I did there.

Jennie you clearly do not frequent central parts of OKC. Sounds like you are living in the wrong neighborhood!
