Maybe it's cultural, or maybe it's because we have more disposable income from affordable housing...

Sadly I am having a hard time telling that some servers care how you tip. We go to certain Beachfront high end restaurant twice a month on average and we have had the same 3 servers over the past 3 years. They don't remember us (always ask if it is our first time there) even though we tip 20% and are there often.
When we lived in Oklahoma we would go to Michael Fusco's restaurant "Flavors" in Tulsa about once a month and we always asked for Jimmy to be our server. He remembered our names and our favorite adult flavored beverages and he got NICE tips

One of my bridge clubs meets twice a month at a local restaurant and we have lunch. When each of us get our check, they have already figured in a 20% tip, which is fine with me. In the past, when we've met other places, I've noticed some of the women are not good tippers. They seem to think a dollar is the going rate.

LOL, I doubt that. So many people are on welfare that they're always desperate for money.

It can also be that Oklahoma waiters/ waitresses can make less then 3 dollars an hour compared to California where minimum wage is still required and tips are a bonus.

Comparing Oklahoma to California is an amazing concept. No wonder Steinbeck sent the Joads out there.
