I once met a 18 year-older who had just landed a job at Disney, but complained about all the "stuffy old people (21 year-old employees) who are just too serious and don't know how to have fun. "

You should not go into a job interview with the idea that you know it all. That's a warning sign to a restaurant manager. They want people who will be responsive to what THEY think is best. Maybe downplay the "been there done that" approach and focus on the "I want to be part of the team" approach. And again, a manager will be reluctant to hire an over-qualified server because they know that the OQ server will not be a long-term employee.
