I'm planning a road trip in July between Seattle and San Francisco. Started researching Oregon, and it looks amazing. I'm looking for suggestions for scenic waterfalls and river rafting along I-5 and the coast. Thanks in advance.

Raft the McKinzie and even the Willamette, but wait a few months. The water is only around 40 to 45 degrees right now.

If you want a taste of the Oregon Coast and not get too detoured, I would recommend this route northbound, just reverse it southbound.

Hwy 138 at Sutherlin west/northwest to 38 to Reedsport. North on 101 to just north of Lincoln City then on 18 back inland toward McMinnville, then follow the signs back to Portland. This will cost you about four hours, but you will see some great coastal scenery on the mid-Oregon coast. This, IMO, is the best diversion off I-5 that you will find.

Put my favorite hang out on your list---Oregon Gardens in Silverton, its 80 acres of gardens showcasing
what grow in our northwest gardens..Neat place for a walk and lunch, it puppy friendly too..
have a nice trip.

Don't forget Crater Lake. It's worth the side trip. Personally I'd drive up the coast from SF all the way to about Newport or so, then cross back to I-5. On your way back down I'd take 26 east from Portland and go down through Bend and to Crater Lake there.
