If you don't mind a bit of a drive, Sisters is kind of kitschy "western" fun, and a beautiful drive from Salem.

Make sure you get a milkshake at the Snow Cap on the west end of town.

I'd suggest you head over to Sisters, Oregon. Then down through Bend and up to Crater Lake. From there jog over to Hwy 199 and go south stopping at the Oregon Caves and then go to the Redwoods. Take Hwy 101 all the way up the coast to Astoria. Head in through Portland and go to Multnomah Falls. After that to Hood River and around Mt Hood, stopping at Timberline Lodge. Then down Hwy 26 to Sandy and from Sandy go the backroads to Silverton stopping at the Oregon Gardens. From there head to Silver Creek Falls and then back to Salem.
I've did this trip 3 times now. Once on a motorcycle in 3 days.

Mid summer, Mt Rainier with a stay at Paradise Lodge, and a couple hour walking around "spirits of Iron" metal sculpture park at west entrance.

North Oregon Coast, of course, Hug Point park and fish & chips at small boat in parking lot near maritime museum in Astoria

Columbia Gorge, Maryhill. For best pics and lighting, Nice to go east in morning on SR 14 from I 205, and west bound in afternoon on I84 and scenic highway / Crown Point Woman's overlook for sunset.

Good food at mult falls lodge, mcmenemins in troutdale, ringside east happy hour.

If you do take McFrostyJ's suggested route (which looks awesome) detour briefly up to Smith Rocks park outside Terrabonne, just north of Bend/Redmond. Really nothing like it !!

You could also rent a boat and hit Detroit Lake for a day and just relax. Opal Creek and Little North Santiam have nice hiking trails as well.

If they are into wine tasting I would visit Evesham Wood on Wallace Rd, and Cubanismio in Salem. You can head towards Carleton/Dundee too and go to Scott Paul, Torii Mor, etc.

If they like beer, I like Gilgamesh's brew pub on Madrona. Great patio seating and decent pub fare. As for food, there are a lot of options but it depends on their taste. Crooked House Bistro on Edgewater is wonderful, but it is French fare and that is not for everyone. What kind of food do they like?

Lots of Wineries with a weekend luncheon near WS.
I'd start at WS's Roth's on Friday for their Wine tasting.
Be careful that Daum's may not reopen this year (near WVCheeseCo).

Go to Pacific City. Pelican Pub for their coast-ocean flavor beers. Do a Dory outing around the Rock.
