So we are debating flying from Maui into Seattle, visiting with family for a week or so, then driving down to Medford. We were thinking of buying a truck up there rather than renting a van to get down there, then looking to buy.

Is there any significant reason it would be better to just wait and pick up a truck somewhere in Oregon? We are probably going for a used 9 passenger Surburban....

Are there different smog requirements (if any), taxes, fees etc that would make it better and easier to get a car in Oregon compared to the WA?

Please enlighten this island girl.....

No sales tax in Oregon, but if you are not an Oregon resident and try to register the vehicle in another state, you will be charged tax by that state.

Registering it also problematic - the temporary tags you get in Washington are not valid in Oregon and vice-versa (if you are an Oregon resident, driving a car with a temp Oregon tag, it's valid while you are driving in Washington, but if you are an Oregon resident, the temp tag you get in Washington is not valid in Oregon, if that's any clearer).

If you don't have a permanent address in either state, you won't be able to register it.

EDIT: to make that clearer - if you are an Oregon resident, and you go to Seattle to buy a car, they will give you a temporary Washington tag, which is not valid in Oregon. If you get pulled over in Oregon, you will get a ticket for not having a valid registration. You have to immediately go to the DMV and get a temporary Oregon tag (usually 30 days).
