KEEP YOUR BREAD FRESH
I did a previous Tip about storing bread, but here's a little more info from the Panera experts.
Remember that you should never refrigerate bread. It gets stale much faster in your fridge than it does at room temperature. Bread that comes in a paper sack should be placed in a plastic bag to help it retain its moisture.
If you intend to keep bread for three or more days, wrap it tightly in plastic wrap and then add a layer of aluminum foil and freeze it. When you want to consume it, remove all wrapping and then rewrap it in foil. Place it in an oven preheated at 350 degrees for 5 to 15 minutes, depending on the size. It doesn't need to heat through; you just want to take the chill off.

Great tips, Pam. I buy these wonderful little sandwich-sized loaves of bread and store in a gallon size zip lock in the cabinet. Amazing how fresh it stays.
We're doing it all wrong! We freeze bread until use, then micro slices as needed. Works for us. Now if we had one of those "faint-see" Panera loaves . . .
