I'll keep this in mind! I have my big Tuesday cookout, so I don't have to cook again 'til next Tuesday, and being I work Fri.-Mon. nights, I've been cooking my breakfast(s), ahead of time, so I merely nuke each breakfast dish on my day of work, mostly egg dishes.

Ironically, I love to cook and I hate to cook! Everyday? No way Ho-zay!!!

You can also make these ahead, using foil muffin pan liners, and freeze them. Pop them out of the freezer, nuke for a minute on 50% power and then for another 30 seconds or so on 100% power. I've done this for years with a recipe from the South Beach Diet book. That recipe is beaten eggs with spinach and a few spices plus a bit of shredded cheese. It's fabulous! I've even taken a couple of these frozen egg cups for my lunch at the office. They travel well.
