Once they're castrated they focus on other things.

Once bulls are castrated they calm down and put on weight faster and retain it better since they're not out looking for action. It makes them quicker to get to market.
While horses aren't sold for food (at least in the US) the idea behind gelding is the same, it calms the horse down. The downside for racing is that you geld a horse and he becomes a winner then you just lost any potential stud fees you might have had.
Several geldings have won the Kentucky Derby over the years.
