It seems you are using the terms "healthy" and "high quality" synonymously and they're really not in this case. A cheesesteak is never going to be healthy. Sure you might find something healthIER, but definitely not healthy and good for you. It's steak, cheese, and bread.

Healthy for me means survivable. Most american food causes my digestion system to bleed and stop processing food, normally I starve before I bleed to death (takes about a month or two). I can make a cheese steak at home but I'd like a place I can just order one instead. (Jakes made me sick). Normally mom and pop restaurants or high end ones are my best bet.

1) Paesano's in the Italian Market offers Taffet's Gluten Free rolls for their sandwiches. Taffet's is across the street. While a cheesesteak is not a regular item on the menu, they occasionally have. its still worthwhile going to get the Italian hoagie or pork (Aruba?) on a GF roll
